So I have managed one very easy healthy gluten free version of Christmas pudding recipes which can serve sensational treats if followed just right. 250g butter, chopped
1 cup brandy
1 cup fresh bread crumbs (gluten free)
750g mixed fruit
1 cup plain flour (gluten free)
1/2 teaspoon ground cinnamon
1/2 cup slivered almonds
1/2 cup chopped pitted prunes
1/2 teaspoon ground nutmeg
3/4 cup chopped dates
1 teaspoon ground mixed spice
1 cup brown sugar
1/2 teaspoon bicarbonate of soda
Beat the butter and the sugar until they're light and creamy and then go on to adding the eggs. Add one at a time and beat well after each addition. Add the fruit, brandy, sifted dry ingredients, almonds and the gluten free breadcrumbs. Mix well.
After you've added the above, it's time to spoon the mixture into 2-litre greased cups in the pudding basin. Cover the basin with baking paper and secure it tightly with a string. Cover with foil and basin lid.
Place the pudding in a large pan with enough boiling water to come halfway up the side of the basin. Cover the pan and simmer for 6 hours making sure that the water level remains constant by adding more boiling water if necessary.
Then, remove the pudding from the water and cool. Cover it and refrigerate until it's ready to be served.
When serving, make sure you re-boil the pudding as above for at least 2 hours and then you can serve with Creme Anglaise if you wish.
